My New Favorite Salad

Hey Everyone....thought I would share my new addiction with you. It's a super simple salad that I've eaten almost every day for the past couple of weeks.

Ingredients:
Lots of mixed greens (mostly spinach)
1/2 cup of edamame
1-3 slices of grilled red, yellow or orange peppers
Grilled chicken breast

Dressing:
1/2 tsp olive oil
3/4 tsp balsamic vinegar
1/2 tsp Splenda

Mmmm...it's so good and so healthy! You get your veggies, protein and good fats. What more could you ask for in a meal?!

I also read your post on Ezekiel bread. I had just bought some to try last week but haven't done so yet. It's amazing what this 'bread' actually is!

Well, the one I have is the cinnamon raisin variety, I have have to admit I really like it!
